What is the difference between the original rear sight that comes with the P07 and the tactical and competitive sights that are available on czcustom?

Beyond that what is the difference between tactical and competitive rear sights?

I am getting ready to order the fiber optic front sight, and wanted to know which of the two I should order for the rear.

Factory sight is plastic.  The other two are actually the same steel sight.  Only difference is the tactical sight has had the sharp edges removed.
